Work on your practice in the stunning hills of Umbria; tour Florence and Rome, Italy's most iconic citites. 

Umbia: renowned for ancient hilltop towns and rolling hillsides blanketed with olive groves and vinyards. This autumn, travel to the heart of Italy where you will stay in a fortified castle village: Castello di Gallano.   Each day, engage in yoga sessions, meditation activities, culinary experiences and much more.   Together with yoga instructor Stephanie Bonetta, Georgia Hardy Tours offers this custom itinerary for a small group of fortunate individuals to truly sample the best in wellness and culture in Italy.

Program Itinerary:

Day 1, Saturday September 21: Individual arrival to Italy and Castello di Gallano 
10am-3pm: with fresh celebration juice and a plant-based buffet lunch
4pm: Free time and rest
5:30pm: Introductions, personal retreat intentions and mantras, journaling #1
7pm: Yin Yoga class for all levels as we stretch the muscles in your body that were stiff and stagnant after a long seated flight. This is the perfect combination of targeted asana poses for lengthening your muscles while at the same time relaxing your nervous system to get deeper into your pose.
8:30pm: Themed buffet dinner

Day 2, Sunday September 22: Castello di Gallano
7-7:15 am: Wake up with your personalized Umbrian basket of local, natural and delicious fruits, snacks, bread, jams and beverages. Remember to stay light before yoga class but do drink plenty of water and herbal tea! 
8am: Learn the basics of pranayama or breathing techniques to calm the parasympathetic nervous system, cleanse your cells and give you energy too! Breathwork is followed by a slow flow Vinyasa class to awaken our muscles, cells and stimulate our lymphatic system.
9:30am: Breakfast and Free time, journaling #2
Noon: Brunch
2-5pm: Silence is Golden and the green Umbrian hills are breathtaking! Enjoy this silent guided walking meditation in the lush woodlands of the rolling hills on Gallano Castle Resort. Partner and group activities focusing on grounding, gratitude and trust will enhance this experience.
5pm: Free time/Pool time
6pm: Yoga
7:30pm: Dinner

Day 3, Monday September 23: Yoga at Castello di Gallano  
7-7:15 am: Wake up, Beverages and Light Snack
8am: Pranayama & Yoga
9:30am: Breakfast and Free Time, Journaling #2
Noon: Brunch
2-5pm: Exclusive Wine Tasting Tour of Private Umbrian Vineyard. Visit a 125 acre family run organic winery and olive grove by private coach who will take you into the rolling hills of Montefalco, one of the most famous regions for Sagrantino red wine.  Once here, the owner will take you on a walking tour of the wine making area, vineyards and olive groves.  You will have a chance to ask questions or just take in the stunning picturesque views as you sip and enjoy 4 different types of wine, native to Umbria, each paired with traditional, organic, homemade gastronomical delicacies.
6pm: Yoga

9pm: Meditation

Day 4, Tuesday September 24: 
7-7:15 am: Wake up, Beverages and Light Snack
8am: Pranayama & Yoga
9:30am: Breakfast and Free time, Journaling #2
Noon: Brunch and Free time/Pool time
3pm: Culinary Italian Vegan Lesson. Put your aprons on, roll up your sleeves, get ready to use your hands and some “elbow grease”!  You will be working alongside the Chef and holistic nutritionist Stephanie Bonetta, as you learn a little Italian and create delicious Italian plant-based cuisine that is healthy too!  Learn the nutritional basics of healthy eating, digestion, nutritional values of food, how to easily prepare traditional Italian appetizers, mains, sauces and desserts using fresh, simple and local ingredients.
6pm: Yoga
7:30pm: Dinner

Day 5, Wednesday September 25: Castello di Gallano
7-7:15 am: Wake up, Beverages and Light Snack
8am: Pranayama & Yoga
9:30am: Breakfast and Free time, Journaling #2
Noon: Brunch and Free time/Pool time
5pm: Partner Yoga and meditation
7:30pm: Closing Celebration Dinner with Umbrian Wine
10pm: Pack suitcases

Day 6, Thursday September 26: Castello di Gallano - Florence
7-7:15am: Wake up, Beverages and Light Snack
8am: Pranayama & Yoga
9:30am: Closing Yoga Ceremony
11am: Breakfast Brunch
1pm: Departure for Florence 
3:30pm: Arrival to Florence and check-in to hotel 
4:30pm: Orientation walk of Florence - a "passeggiata"! Stroll along the cobblestone streets of Florence and for those seeking a panoramic view hike up to Piazza Michelangelo.  
7:00 pm: Dinner in a local pizzeria

Day 7, Friday September 27: Florence
8:00 am: Breakfast at the hotel 
9:00 am: Morning tour of Florence's principal sites including the Uffizi Gallery, the Renaissance palace designed by Vasari in 1560 that contained the offices of the Medici’s administration. Today it is one of the finest museums in the world with rich collections of drawings, prints, paintings and sculptures. Afterwards, continue on foot to the Accademia to see David, Michelangelo's most famous sculpture. 
Noon: free time for lunch with the remainder of the afternoon free to explore Florence's markets, shops, and historic city centre. 
7:00 pm: Regroup at a local trattoria for a traditional Italian meal

Day 8, Saturday September 28: Florence - Rome
8:00 am: breakfast at the hotel
9:00 am: Check-out of the hotel and board the coach for the transfer to Rome
12:00 pm: Arrive to Terresabina Agroturismo.  Enjoy aolive oil tasting and feast on an organic lunch
1:30 pm: Depart Agroturismo 
3:00 pm: Arrival to Rome, check-into hotel, followed by free time until dinner 
7:00 pm: Dinner at a traditional Roman trattoria 

Day 9, Sunday September 29: Rome 
8:00 am: Breakfast at the hotel
9:00 am: Transfer via Metro to the Vatican and enter St. Peter's Basilica, the heart of Christendom and the headquarters of the Roman Catholic church.   Vatican City, a 109 acre state, is bounded by a wall built in the 9th century and by the colonnade of St. Peter’s Square, which is dominated by the facade of St. Peter’s Basilica, the Renaissance masterpiece that was designed by Bramante, Michelangelo and Bernini.  Standing over St. Peter’s Tomb, the interior of the Basilica contains remarkable architectural and artistic features designed by these great masters.  
12:00 pm: Free time for lunch
1:00 pm: Regroup and travel to the ancient Colosseum and Forum for a guided tour.  The Colosseum, founded by Emperor Vespasian and opened by his son Titus in AD 80, was where gladiator fights took place. Immensely impressive with a circumference of 530 metes and a height of 48 metres, the Colosseum was built to seat 50,000 spectators. The Roman Forum was the commercial, civil, and religious centre of Roman life in the Republican Era. 
3:30: Remainder of the afternoon free to explore Rome's many piazzas and shopping districts.
7:00 pm: Farewell dinner at a local restaurant

Day 10, Monday, September 30: Rome and Departure
After breakfast, individual departures.  Bid Italia “A Presto” and return to Canada or on to other adventures in Europe! 

About Stephanie Bonetta: Yoga Instructor and Tour Director

Stephanie started practicing yoga 10 years ago.  Practicing and teaching yoga continually teaches her to live life to the fullest, savor each breath one OM at a time and to see with loving eyes (more on that at the retreat)!  She is a certified teacher of Vinyassa, Yin and Restorative practices with over 500hrs of yoga teacher training in  Canada and Bali.  She also hold a valid First Aid & CPR certification.  As a certified holistic nutritionist, she helps clients all over the world balance their “imbalances” via customized wholefood meal plans, natural supplements, herbs, essential oils and other integrative modalities for healing body and mind.  If you don’t find her in a yoga studio, you will definitely smell the scent of her cooking and baking and you can call her "Chef Stef!"  Her passion is inspiring, supporting and educating people in taking charge of their health and wellness naturally and successfully!  Click here for more on Stephanie and her yoga practice in Ontario's beautiful Niagara-on-the-Lake.
